Pueo’s Osteria, located in Waikoloa Village, is an Italian-inspired, inviting restaurant that provides great food in a delightful environment. The Chef focuses on the finest Italian products paired with seafood, produce and meats from boutique farms (sourced locally whenever possible), including “farm-fresh” products from local farmers’ markets.
The Pueo is a local, indigenous owl which represents the Chef's focus on dinner and serving food until midnight. Authentic Italian cuisine, we use the finest imported Italian products, such as parmigiano reggiano, San Marzano tomatoes, prosciutto from Parma and "00" flour just to name a few. Then we lay a local inspired farm to table concept on top of that, to create our Regional, Seasonal and Artisanal (RSA) approach with regards to local sourcing. All of this while maintaining approachable prices.
A fun and innovative wine list highlighting unique varietals from different regions of Italy and California. In addition, we feature over a dozen wines by the glass at a great value. Our curated wine selection is specifically chosen to complement our seasonal menus. We provide on-going wine training and tastings for our staff to better guide our guests through their dining experience.

Classic approach. Home made pastas and gnocci using the famous "00" flour imported from Italy, along with brick oven pizza and bread. Great olive oil, burrata cheese and handcrafted desserts. We have a rustic, artisanal approach where sometimes less is more. Our philosophy is to start with a great ingredient and utilize cooking techniques and recipes that will highlight the natural flavor and texture of those products.
At Pueo's Osteria we feature a locally-inspired menu focusing on fresh, local products to develop menu items that fit our Regional, Seasonal, Artisanal approach. We source local products based on availability, such as heirloom tomatoes, local kale, asparagus, poha berries, micro greens, local herbs, Hamakua mushrooms, local wild boar, Kona raised Kampachi, Kona cold lobster, baby romaine, lilikois, rambutan, mango, local honey, goat cheese and Kona coffee. We source Hawaiian seasonal, wild-caught fish from local fishermen in-season, and locally farm-raised fish and shellfish from NELHA to support sustainability.
Throughout his 30 plus culinary years, partnering with local farmers and fishermen still excite him. His steadfast philosophy is to create rewarding dining experiences that are culinary adventures for the soul – highlighting his commitment to regional, seasonal and artisanal (handcrafted) products. “At Pueo’s, your culinary adventure will be grounded in Hawaiʻi – but the flavors will take you abroad to Italy,” said Chef Babian.
The award-winning food and beverage professional most recently served as the Beach Tree restaurant general manager at the Four Seasons Resort Hualalai. A certified sommelier, Lyau also boasts management stints at Hualalai Grille, Maui’s Nick’s Fishmarket and Sarentos on the Beach.
Christine stays very busy raising two children, Jake (16) and Jaelyn (12),both born and raised on the Big Island. She has been a realtor for over 7 years, currently with Coldwell Banker Maryl Realty. Christine is partners with her husband, Chef Jim, and has over 20 years of food and beverage experience that she brings to the table. Christine can be seen working the floor, meeting and greeting guests, as well as covering the General Manager's day off and keeping Chef in line.
A highly qualified, engaging, attentive and friendly staff awaits you at Pueo's Osteria. We hire passion and then we take them through a very intense training that includes farm tours and food and wine tastings. "Our very first day of training took place at Kekela Farms, we toured the farm and then we ate lunch at the farm, such a great way to introduce a team to the farm to table approach" said Pueo's Executive admin, Natalia Mastrascusa.
As for the front of the house decor, you will see Tuscan colors, venetian stucco, wood style floors, granite bar top, arches, al fresco dining, semi-open kitchen and chiavari chairs.
For the back of the house, we also hire passionate and motivated people. Passion for delivering great dishes, passion for creating a relationship with our local framers. Our cooks enjoy the continuous education that takes place at Pueo's. Our back of the house is deeply involved in the creation of new menus.
If you take a peek into our kitchen you will see the chefs making gnocchi, home-made pastas and sauces, always focusing on flavor and consistency.
